Okra Suppe
Okra Soup, Shaker

2 veal knuckles
2 large onions, diced
2 carrots, diced
4 tomatoes, skinned and cut
4 1/2 quarts water
1 t salt
1/2 t sugar
1/8 t pepper
1 quart okra, cut fine

Split knuckles with cleaver and put in soup pot with onions, carrots and tomatoes; add water and seasonings. Simmer for 6 1/2 hours. Remove knuckles and cut good meat into cubes and return to pot. Take the glutinous part of the meat and grind it into jelly and add to soup. Now add the sliced okra and simmer for 30 more minutes. This okra soup equals any turtle soup. Serve very hot. Serves 8.
